Potato Soup-1 C.=1 point

Thanks for this idea Rebecca! We loved it! 1 point for a cup is wonderful :)

1 bag (16 oz.) ORE-IDA Hash Brown Cubes
4 cans FF Chicken Broth
1 packet Country Gravy Mix

Saute potatoes for 10 minutes
Add broth and gravy mix
Simmer for about 20-30 minutes

Top with:
-cheddar cheese
-bacon bits
{figure points for you toppings}

*When I made this soup I did it a little different. I didn't use the frozen potatoes because we had a TON of extra baked potatoes from an event. I took the skin off, cubed it all up, and then weighed 16 oz. (2 potatoes) of it to put in the soup. Then because of time I only let it cook about 15 minutes which was fine but it didn't get quite as thick. Next time I do it I'll definitely use more potatoes and cook it the full length. Probably 3 times as many potatoes so there's more per bite. I'll have to adjust the points but it won't be too bad since these are potatoes we're talking about.

If anyone has winter type recipes, please share!! Well, to be honest, I could use some ideas for anything. For the last few weeks I've been kinda burnt out and I finally have my head back in it so some help would be wonderful!

Crustless pumpkin pie-1/6 of the pie is 1 point

Someone in my Weight Watcher group brought some samples and this recipe last week.

1-15 oz. can pumpkin
1/2 C. EggBeaters
1 1/2 C. skim milk
3/4 C. splenda
1/2 t. salt
1 t. pumpkin pie spice

Beat until smooth. Spray pie and pour mixture into the pan. Bake at 400 for 15 minutes, then at 375 for 45-50 minutes until knife inserted in center comes out clean.

1/6 pie = 1 point or Filling Food

Servings-6

I would probably use 1/2 splenda and 1/2 regular sugar, but that's just me. Of course I would have to figure the points if I did that. The little sample she brought to taste was quite tasty. Let me know if you like it!

Chocolate Freeze-4 points (and a whole milk serving)

I've been using a scoop of my powdered/dry milk in some different foods lately. 1/3 C of my dry milk is 1 point and it's a whole milk serving. The other day I made oatmeal and put part of a scoop in it and it was great. I normally put a 1/2 C of milk in my oatmeal but this way, since it's dry, it just makes it more creamy and if I use the whole 1/3 C it's giving me the WHOLE milk serving instead of just half like a half cup of milk would.

Well today I tried something that I really liked:

Blend-
1/2 C. FF half and half-2 points
1 scoop (1/3 C.) of powdered milk-1 point (and a whole milk serving)
2 t. creamer (the kind you would put in coffee)-0 points
1 1/2 T. chocolate syrup-1 point
1 t. cocoa-0 points
8 ice cubes
Right before I blended it I put about 1/4 C of water in it over the ice cubes.

It was pretty rich and thick and creamy. Give it a try!

Laughing cow cheese. I'm not sure if you have mentioned these before but I love them one so many things. They come in a little triangles that are in a circle cardboard container. They are usually by the packaged meat by the deli. Well at walmart they are. Anyways one triangle is 1 pt and I put it on celery, my 1 pt bagels, sandwiches, and crackers. I seriously couldn't live without it.

The other thing is pumpkin muffins. These are so good especially with Fall coming. These muffins are 2 pts and you can make them 1 pt if you put a fiber cereal in them. the 2 pt recipe is

1 box of spice cake mix
1 can of pumpkin
1 cup of water.

Mix all ingreidents together. should make 24 muffins. Bake at 350 for 20- 25 min.

Clam Chowder - 2 points per cup

3 (10 3/4 ounce) cans 98% fat-free cream of celery soup
2 (6 1/2 ounce) cans chopped clams, not drained
1 (1 pound) bag frozen fat-free shredded hash brown potatoes
1/2 cup chopped onion
1 pint fat-free half-and-half
1 T. bacon bits (I buy the bag of real bacon bits)

put all ingredients in slow cooker and cook on low for 8-9 hours


Homemade Chicken Noodle Soup - 3 points per cup

1 1/2 pounds boneless, skinless chicken breasts (3-4 depending on size)
1 (49 1/2 ounce) fat-free chicken broth
1 cup cut up carrots (cut quite small)
1/2 cup chopped onion
1/2 cup chopped celery
2 small bay leaves or 1 large bay leaf
2 cups home-style egg noodles, uncooked (I use "Country Pasta" brand)
salt and pepper optional

Cut the chicken into small pieces and brown on stove
In slow cooker combine everything except the noodles. Cook for about 4 hours on high or 7-9 hours on low. About 30 minutes before you want to eat add the noodles. If you cooked it on low turn it to high before adding the noodles. Cook the noodles about 30 minutes (be careful not to over cook) then turn the slow cooker off and remove the bay leaves. Use salt and pepper to your taste.

1 point tortilla taco's

I've tried a few different 1 point tortilla's and the one that I like the best is La Banderita. They're the best flavor and texture that I've found. Too bad regular tortillas are 3 whole points because I LOVE them, but not enough to waste 6 points to make 2 small taco's.

Please share if you have found a 1 point tortilla you love!

I ALWAYS use ground turkey since Tom can't have beef. It has less calories and fat (even compared to the 10% ground beef). I'm totally used to it now and I'm even getting to the point where I prefer it over ground beef. I know, crazy! :)

Anyway, I fry it up, put 3 T. of taco seasoning and then about 3/4 C. of Pace Picante in it and let it simmer.

To make taco's I always change it up a bit.

This is what I did last time I made taco's (7 points)
tortilla (warmed)-1 point
2 or 3 oz. seasoned turkey meat-2 or 3 points
1/2 C. black beans (or kidney beans, pinto beans, or refried beans)-1 point
2 T. light sour cream-1 point
a good amount of diced tomato-0 points
1/3 C. WW fiesta cheese-2 points
lots of lettuce-0 points
salsa-0 points

If I'm doing it for lunch this is exactly what I would do. If I do it for dinner, since I allow more points for dinner, then I would make 2 taco's using 1/2 the cheese on each, 1/2 the beans on each and 2 oz. of meat PER taco. This would make both taco's worth 10 points total.

Grilled Sandwich-5 points

Sandwich thins (1 pt)
Put 6 slices of Oscar Myer Deli fresh black forest ham (1 pt)
1 oz of reduced fat cheese (2 pts)

Spread the sandwich thins with Land o Lakes light butter with canola oil on the outside (1 Tbs=1 pt) and grill it.
(She actually flips the sandwich thin so the inside is actually the outside so it butters and grills better)

Put tomatoes and thinly sliced red onions on it before you grill it so they get nice and warm
Then take it off and add a little shredded lettuce

I can't wait to try this.

**You could use the 1 point cheese slices (Great Value 2% singles or the WW brand) instead if you would like. This would make the sandwich 4 points.

Jell-o Live Active pudding-1 point

She uses the Dark Chocolate Tuxedo and will dip a low fat graham crackers or a banana in it for a snack.

Keebler low fat Grahams-2 points for 2 full sheets!

Rebeccca also does a 3 point pudding pie type thing: (I've tried this idea of hers and it's yum!)

Crush 2 graham crackers sheets in a bowl-2 points
Pour a jello over the top-1 point
Top with 2 T. sugar free cool whip-0 points

Peaches/Strawberries 'n Cream-3 points

I just have to share this one because I've been loving this as a snack or dessert!!

Fruit-1 point (strawberries=1 & 1/2 C. or Peaches=6 oz.)
6 T. Fat Free Half & Half- 1 point (this is a GOOD amount if liquid!)
4 t. Sugar-1 point
1 t. vanilla extract (about that amount)
several dashes of nutmeg (only if you're using peaches. NOT if you're using strawberries)

It's just fine eating it right away, but I prefer to mix it all and put it in the fridge for 15-30 minutes to let all the flavors mix.

It's delicious and very satisfying. I think my favorite part is drinking the rest at the end :)

New Food Ideas!

I LOVE when people share "food finds"! Tonight at Weight Watchers some different people shared some things that I want to try at some point. I don't know the exact info about them right now, but here's what I do know:

1. At Trader Joe's and Fresh and Easy you can buy a Brownie mix that you make with yogurt and they're 2 points for 1/12 of the pan. The people say they're pretty good!

2. There are some single serving veggies that are in the freezer section and they have a cheesy sauce on them for 0 points. For 2 servings it would be 1 point. I'm not SURE I'll like them, but if I do, I think it will be something good to add in with my lunch.

3. Uncle Ben's brown rice. It's 1 C. and you only have to microwave it for 1 minute and the points are quite low. I just don't remember what the points are. Again, this is something I think would be handy to have around for when I'm at a loss for ideas. I'm thinking I would like to do a little rice bowl with some chicken and beans and salsa, kinda like a rice bowl I've gotten at El Pol lo Loco. Just a though, but haven't finalized the thought yet :)

4. Fresh and Easy has some honey pretzel twists that several different people said are really good. They mentioned that the pretzels are a good size (they were showing 3 inches tall and said it's kinda thick) and you get 10 of them for something like 1 point (possibly 2 points, I can't remember exactly). If you have the munchies they would definitely do the trick!

Ok, so I shared some ideas, now somebody share something with ME!!!! :) I don't care if I don't know you, I would just like some help here people :) I like variety and good ideas! Thanks in advance! :)

Taco Salad-7 points

1 oz. baked tortilla chips (Tostito brand)-2 pts.
2 oz. meat (I used ground turkey burger seasoned with taco seasoning)-2 pts.
1/2 C. kidney beans-1 pt.
2 T. light sour cream-1 pt.
Cheese (1/6 C. of WW Mexican blend cheese which is 1/2 of their serving size)-1 pt.
lettuce
salsa

-You could also add in olives or avocado for more points.
-I use the salsa and sour cream instead of a salad dressing. I feel like I get more sauce for less points and prefer the flavor.

Light Zesty Italian dressing-2 T. = 1 point

-I use this to marinade my shrimp
-I'll cut up cucumber and let it soak in it
-Or really just use it for a marinade for whatever you want :)

Sandwich thins and ideas to use them

Sandwich thins are flat buns and great because they're only 1 point for the pair! There was a post about a fish sandwich using them and here are a few more ideas:

-Hamburgers- using Jennie-O burger
-BBQ pulled pork sandwich
-Sloppy Joe's
-BLT's-using less sodium bacon (it's less points and I've heard it's better than turkey bacon)
-Chicken Salad-other post about chicken salad
-Tuna- other post about tuna
-Turkey sandwich

Also, you could slightly toast it to do any of the above ideas. Just remember that it's 1 point for both sides of the sandwich thin and some of these ideas I already posted were with 2 slices of 1 pt. bread. So you're saving 1 whole point using the sandwich thins :)

Chocolate Ice Cream-2 points

I get the Country Rich Choclate light ice cream from Walmart. They come in square, gallon sized containers. I didn't even realize it was light ice cream until Tara told me it was. It is so yummy and as I was eating my half cup last night I told Kyle, "I seriously just love this ice cream," for the thousandth time.

1/2 c.= 2 pts.

Fish Sandwich - 4 points

Sandwich thin - 1 point
1 slice weight watcher cheese - 1 point
1 Gorton's garlic butter grilled fillet - 2 points

Tartar Sauce: 0 points
1 T. low fat mayo

Pronto Pizza Patties-6 points

This is another meal that we all love! Don't let the length of this post scare you away. It's really easy and very tasty :)

Prep time: 15 minutes
Cook time: 13-16 minutes

1 lb. 93% lean ground turkey
1/2 C. seasoned dry bread crumbs
1/2 C. diced green bell pepper
1/4 C. finely chopped onion
1 garlic clove, pressed
1 egg white
1 can (8 oz.) pizza sauce, divided
1/2 C. (4 oz.) shredded reduced-fat mozzarella cheese
6 French or Italian bread slices, cut 1/2 inch thick
2 t. olive oil
1 t. Italian Seasoning Mix (the Pampered Chef kind is really good!)

1. Combine-turkey, bread crumbs, bell pepper, onion, garlic and egg white. Add 1/4 C. of the pizza sauce to meat mixture. Mix lightly but thoroughly.

2. Form mixture into six oval patties, 1/2 inch thick. Heat skillet over med. heat, then cook patties 12-14 minutes or until meat is no longer pink in center, turning once. About 1 minute before patties are done, top with cheese. Remove patties from skillet and keep warm.

3. Wipe out skillet w/ paper towel. Brush one side of each bread slice with olive oil; sprinkle with seasoning mix. Heat skillet over med. heat. Place bread slices seasoned side down in skillet. Toast 1-2 minutes or until bread is lightly browned.

4. Place patties on bread slices. Microwave remaining pizza sauce, covered, on HIGH 45-60 seconds or until heated through. Serve with sandwiches.

Yields: 6 sandwiches

Nutrition per serving: Calories 270, Total Fat 9 g, Saturated Fat 2.5 g, Cholesterol 45 mg, Carbohydrate 26 g, Protein 22 g, Sodium 510 mg, Fiber 2 g.

Southwestern Skillet Chicken (around 8-10 points for 1 serving)

I tried a new meal last night and it was a HIT! It only took me about 30 minutes and I only used 1 pan! Dang easy and dang good!! :)

You'll need:
1 to 2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breasts (about 1 1/4 lb)
1 tablespoon vegetable oil
1 can (15 oz) black beans, drained, rinsed
1 can (11 oz) Green Giant Mexicorn, undrained (whole kernel corn with red and green peppers)
1/3 cup salsa
2 cups hot cooked rice

-Mix chili powder, salt and pepper then sprinkle evenly over both sides of chicken breasts.
-Heat oil over medium heat. Add chicken and cook 8 to 10 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F).
-Stir in beans, corn and salsa. Heat to boiling. Reduce heat. Cover and simmer 3 to 5 minutes or until vegetables are hot. Serve with rice. Makes 4 servings.

I make a rice that we love so if you'd like to try it here it is:
In rice cooker:
3 1/2-4 C. Chicken Broth (in place of water)
2 1/2 C. Rice
2 t. garlic salt (sometimes I use 1 T.)
When it's finished cooking, stir in about 2/3 of a can of diced tomatoes.

This rice goes really well with a Mexican/Southwestern meal!

For my meal I did (for 8 points):
1 C. of the black bean/corn/salsa mix-2 pts.
3/4 C. of (my) rice-4 pts.
2 oz. chicken-2 pts. (do more chicken, for more points, if you would like)

My kids LOVED this meal and ate it quickly and quietly!! :) I also doubled the recipe because my kids are BIG EATERS (yes, even though they're girls) and plus, we love left-overs.

Turkey Avocado wrap-6 or 7 points

Today for lunch I had a wrap similar to other wraps I make, but it was delicious!! It was pretty much the Melted Cheese wrap, but better since it had a couple more additions.

The reason I put 6 or 7 points is because it would depend on what kind of cheese you use. I'm a cheese lover so I like regular cheese. No fat free or light for this girl :) I'm willing to use more points on cheese which I recognize most people aren't.

You'll need:
Flat out-1 point
1 oz. cheese(2 or 3 points depending on cheese)
turkey (about 6 deli slices)-1 point
2 oz. avocado-2 points
onion salt-dash it pretty well
lettuce
balsamic vinegar (about 2 t.)-0 points

DELICIOUS!

The main difference is that I added the avocado and the onion salt. The onion salt blended really well with the balsamic.

First melt the cheese on the flat out.
Then place (in this order) turkey, avocado slices, sprinkle with onion salt, smother with lettuce and then drizzle with balsamic vinegar. Roll up and enjoy. It's filling, too.

Flat out pizza - 4 points

1 flat out - 1 point
1/2 cup Hunt's garlic and herb spaghetti sauce - 0 points
2/3 cup weight watcher's mozzarella cheese - 3 points
bell pepper, onion, mushroom (or other veggies of choice)

I heard there is a turkey pepperoni at Albertson's. If I find it I will update this recipe. You could also add Italian sausage for more points.

You could also use a 1 point pita for a thicker crust.

Bake at 350 until cheese is melted and bubbly

Cheese fantastico Salad dressing-1 pt (2 T.)

This dressing is awesome!! The brand is Bernstein and the name of dressing is Cheese Fantastico. It's Italian, but not just a plain Italian, it's CREAMY, which I love!

This is also a marinade. It would also be really good to marinate chicken in it, or us it for a pasta salad.

Bagel and Cream Cheese-2 points

A 1 point bagel, how awesome is that?

I get these at Walmart in the refrigerator section right next to the cream cheese.
The brand is Western Bagel and I get the Cinnamon Spice flavor. There are also several other flavors to choose from.
For Breakfast I will toast (or not) a bagel and then spread a Tablespoon of the WW cream cheese on each bagel. So...

1 bagel - 1 point
2 T. WW cream cheese - 1 point

Baked Potato Bar-8 points

7 oz. Potato (this makes it big so you could do less and count less points)
1/2 cup Hormel Turkey Chili with Beans
1/2 cup Campbell's Cheddar Cheese Soup
1 T. Oscar Meyer real Bacon Bits
2 T. Fat Free Sour Cream
Steamed Broccoli (the more the better)

Very filling and Oh so yummy. This has so much flavor and I think I've made it clear by now that I LOVE flavor, no, I NEED flavor!

Breakfast Smoothie- 4 points

I didn't have any milk in my house this morning so I had to come up with something quick before my kids got too annoyed. I don't know that I normally would have done this random combination, but I didn't really have any other choice. Its what I had in the house.

1/4 cup regular vanilla yogurt
1/2 cup unsweetened applesauce
1 1/2 cups fresh strawberries
1/2 of a ripe banana
1 small clementine
1 cup (or a little more) crushed ice

Put in the blender in this order and blend.

It made about 3 1/2 cups and I gave the last half to Hudson. It was really good and really satisfying for me.

Wendy's Crispy Chicken Sandwich-8 points

Again, on the run, this is a pretty good choice. Especially if you're sick of grilled chicken :) It's 8 points, but I'm pretty sure it has the tomato and lettuce.

Wendy's Ultimate Chicken Grill Sandwich-7 pts.

This sandwich is a good choice when you're on the run and you have to grab something. Stay safe with this choice rather than a hamburger that will use the points for half of your day :) It's very tasty, too.

Jack in the box Chicken Fajita Pita-7 pts.

This is a great choice when you're on the run and you need to grab something quick. I love it, it's delicious and filling. I always want more, but only because it's so good :)

Pringles (fat free)-1 pt. for 16 chips!

If you're looking for something to munch on, Pringles are the thing for you. I'm pretty sure it's 16 Pringles for 1 pt. You can't go wrong with that :) It's a great snack or something to have along side your sandwich.

The 2 flavors I really like are "BBQ" and "Sour Cream and Onion".

My family also LOOOVES the original, but it's not my favorite. You'll definitely have to try it out for yourself.

Orville Redenbacher's Kettle Corn 94% fat free (100 Calorie pack)-1 pt.

I really like this popcorn!! ... Even better than the "real" stuff with more fat :)

The big regular sized bag is something like 4 pts. for the bag (I don't remember at the moment), but I remember eating the whole things sometimes when I was needing something to snack on that was sweet and yummy.

Dreyers Slow Churn ice cream-3 pts. for 1/2 C.

I've been loving the Dreyers Slow Churn Ice creams.

The 3 I'm in love with at different moments:
Rocky Road
Caramel Delight
Mint Chocolate Chip

All 3 of these are 3 pts. for 1/2 C. and I always have 1 full C. for 6 pts.

Chicken Salad Wrap-5 points

2 T. light miracle whip-1 pt.

diced chicken (2 oz.)-2 pts. (do how much chicken you like, 1 oz.=1 pt.)

Mix up the ingredients and put in flat out and roll up.

These are great for making wraps of any kind. 1 point BABY!

Oroweat double fiber bread-1 pt. per slice

I really like this bread. It's really good and each piece is pretty big and heavy for 1 point.

Creamy Citrus Salmon-8 (fish or chicken marinade)

3 frozen salmon (I get mine from costco) 7 oz.=8 points
2 C. non fat plain yogurt Juice from one lemon
1T. Dijon Mustard
2 garlic cloves, pressed
1 1/2 t. oregano
1 t. garlic salt
3/4 t. pepper


Mix together. Pour a little in a small dish and then lay the salmon on it. Finish by pouring the rest of the marinade over the salmon so it is completely covered. Let sit for an hour or so and then move salmon onto a cooking sheet. Bake at 350 degrees for 20-25 minutes. Serve with a vegetable.


Chicken could be used with this marinade also. It would be just as good and less points.

Bran Muffin-2 points

3/4 C. all purpose flour
1/2 C. whole wheat flour
1/2 C. sugar
1 T. baking powder
1/2 t. baking soda
1/4 t. salt
1 t. cinnamon
2 C. Kellogs All-Bran cereal (or the Fiber One brand of it)
1 1/2 C. unsweetened applesauce
1/4 C. fat free milk
3 egg whites
1/2 C. raisins

Directions
1. stir together flours, sugar, baking powder, baking soda, salt and cinnamon. Set aside
2. In large mixing bowl, combine all-bran cereal, applesauce and milk. Let stand about 5 minutes or until cereal softens. Add egg whites. Beat well. Add raisins and flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2 inch muffin-pan cups coated with cooking spray
3. Bake at 400 for 20 minutes or until lightly browned. Serve warm.
Yields: 12 muffins

{FYI, the "Fiber One" all-bran cereal has less calories, less fat, and more fiber than the Kellog all-bran cereal. I don't know if it would change the points value, but I figure less calories and fat is still better :)}

One Can Soup-2 pts. (for 1 C.)

You'll be using 1 can of each of these:
(don't drain any)
Kidney beans
Fat free refried beans
Mexican style chili beans
Corn
Diced tomatoes
Tomato sauce
Chopped mild chili's
1 can water (plus or minus for the consistency you want)
1 package taco seasoning (or 3 T.)
1 package Hidden Valley Ranch (dressing)
1 lb. ground meat
Large onion

Mix everything and cook on stove top until heated through.

1 C.-2 pts.

Top with light/fat free sour cream, green onions, cheese and tortilla chips (count points for each thing you put on)

Creamy Italian Chicken sauce-1 pt. per oz. (about a 7 pt. dinner total)

3 chicken breasts
1 packet Italian seasoning (dressing)
1/3 less fat cream cheese 8 oz.
98% cream of chicken
1 C. water

In crock pot, on low for 6 hours put:
chicken
Italian seasoning
water

After the 6 hours take the chicken out and shred it.
While you're shredding the chicken put the cream cheese and cream of chicken in the crock pot.
Add the shredded chicken back into the crock pot and stir everything together.

Serve over rice.

For the sauce alone it's 1 pt. for 1 oz. Your points will depend on how much sauce you use and the your rice.

1 C. white rice-4 pts.
3 oz. sauce- 3 pts.
veggies- 0 pts.

Tuna Sandwich-5 pts. (w/o cheese)

Strain Tuna really well. (I actually put my hand in the tuna can and squeeze the juice out and then turn the tuna and squeeze it more and turn and squeeze. I like all the juices out of it.)

2 oz. tuna-1 pt.
1 T. (not heaping at all) walnuts-1 pt.
1 T relish-0 pts.
2 T. lights miracle whip-1 pt.
2 slices Oro Wheat double fiber bread-2 pts.
mustard-0 pts.

(1 oz. cheese-3 pts. This is where most people would use fat free or less cheese than I do. This makes my sandwich 8 pts.)

Put tuna mixture on the bread, add lettuce and cheese. You could also put tomato or whatever sounds good to you. This sandwich is very satisfying!

Meatloaf-4 points

1 lb. ground beef (10% of less)
1 1/4 C. salsa
3/4 C. quick oats
1 C. grated carrots
2 small diced tomatoes
1/2 C. chopped mushrooms
little onion
spray loaf pan


cook at 350 for 1 hour 5 minutes

Cut the whole loaf into 6 pieces. Each piece is 4 pts.

Mashed potatoes and a veggie would go good with this, just add those points.

Spinach/Chicken Salad 5 points

Arrange fresh spinach on large plate
Cut 4 0z. grilled chicken into bite sized pieces
4 oz. or 1 cup fresh pineapple cut into bite sized pieces
Drizzle with balsamic vinegar

You can also add chow mein noodles or won-ton strips but you need to add in points.

Crunchy Granola Bar-4 points

I'm a snacker...and I love Nature Valley Oat's 'N Honey Crunchy Granola Bars. I like them for a snack in the morning, afternoon or at night before bed. To me they are ultra satisfying.

1 package or 2 bars= 4 points

Frosted cappuccino drink-4 points

1/2 C. fat free half & half-2 pts.
1/2 C. fat free (or 1 %) milk-1 pt.
1 1/2 T. caramel-1 pt.
1 t. postum (non caffeine coffee substitute)-0 pts.
4 ice cubes (or 8-9 ice maker sized cubes)

Blend and enjoy!

(the recipe says to top with whip cream, but I don't use it to save points/calories. It's just fine without it.)

Jack Chicken & Veggies with Rice pilaf-9 points

This is by far one of my favorite recipes. I like flavor and lots of it. This recipe never fails me.

Chicken-4 points or however many ounces you want.
Pepper Jack Cheese- 2 points for one slice (Great Value brand. 12 slices in a pack)
Veggies- 0 (make sure you use a LOT to fill you up. And while we're at it lets just admit they're YUMMY!)
Rice Pilaf- 3 points for 1/2C. For me its totally worth it.

Marinade chicken breasts in:
2T soy sauce
2T lime juice
2T vinegar
2T oil
1T minced onion
1 clove garlic
1/2 t. sugar
~Don't be scared by how many ingredients there are. It's super quick and you probably have them all in your kitchen.

I like to put the chicken in the marinade just after breakfast so it can get nice and tasty. Depending on how much chicken I'm doing I may double the marinade.

Grill chicken on the top shelf of the BBQ. Give it about 10 minutes each side on medium heat.

While the chicken is grilling cut up bell pepper (any or all colors), yellow onion, and mushrooms all into strips. Put about 1/2t. - 1t. oil in a pan and saute the veggies on medium heat. To get them crunchy but a little soft I like to add some water to them, they soften up immediately.

When the chicken is done on the grill bring them inside and lay them on a cookie sheet. Lay a slice of pepper jack cheese on each chicken breast, cover with TONS of veggies and broil until cheese is melted.

Serve with Rice Pilaf

Cranberry Cream Cheese and Turkey Wrap- 6 points

Lay a flat out on the counter-1
Spread 2T. cream cheese down the center-1 (WW brand-whipped)
Spread 1/4 c. cranberries (not jellied) on top of cream cheese-2 (Great Value brand)
Then put 2 ounces *left over cold Turkey on it-2
Generously cover with chopped lettuce and wrap it up!

It may seem like a lot of cream cheese and cranberries but it makes it so creamy and juicy and I DONT like dry tasting meat. The lettuce is a must. It gives it that yummy crunch.

* I usually make a Butterball brand Boneless Turkey Breast Roast (from Walmart) for dinner a few nights before. We eat it with mashed potatoes and gravy and some sort of vegetable. I then use the rest of the Turkey for other things to finish using it up.

~To make the Turkey Breast Roast you can put it in the crock pot frozen for about 7 hours on low.

Steamed broccoli-0 points

In a steamer-
-Put the broccoli in
-sprinkle well with garlic salt

Steam about 20 minutes

I love this! It's adding some good flavor to your vegetables for 0 points.

Broccoli with oil-1 pt.

On stove top combine-
broccoli-0 pts.
1 tsp. olive oil-1 pt.
sprinkle generously with garlic salt

{add more oil depending on preference or amount of broccoli}

Don't cover it.
Fry for about 15 minutes on medium heat.

This is scrumptious!! My kids even love it and they think the oil and garlic salt is a sauce :)

This is a good way to get in 1 oil, or both.

Yogurt and granola-3 points

1/2 C. Dannon light and fit yogurt-1 pt.
1/3 C. Just bunches granola (it's the Honey bunches of oats granola only)-2 pts.

Melted cheese turkey wrap-5 pts.

Flat out-1 pt.
1 oz. cheese (I use regular cheese, not fat free)- 3 pts.
1 oz. turkey deli slices-1 pt.
sprouts or lettuce-0 pts.
balsamic vinegar-0 pts.

Melt cheese on the flat out then add the rest
Drizzle with balsamic vinegar
Roll it up.

Shrimp Kabobs--3 pts.

{These are JUST like Applesbees WW shrimp kabobs}

Jumbo shrimp (I used 10)
Marinade in Zesty Italian dressing about 10 minutes before barbecuing
Place on kabob sticks
Barbecue on medium fire leaving it open
Cook on one side about 7 minutes
Flip them over and brush a little more Italian dressing on
Cook another 7 minutes or so, until pink

Teriyaki sauce for dipping, yum.

Serve with veggies (I steamed asparagus)
