2 T. olive oil
1 medium onion chopped (I use dry onions)
4-6 cloves garlic minced (I use 5 t. of the crushed garlic that you store in the fridge)
2-15 oz. cans of black beans drained
1-15 oz. can diced tomatoes
1 T. chili powder. (to taste)
1 t. ground cumin
1/8 t. hot sauce (Tabasco?) (I use 1/4 C. salsa instead)
Heat oil in large pot
Add onion and saute 5-7 min.
Add garlic and cook 1 min.
Stir in black beans and 1 C. water
Add tomatoes and seasonings
Simmer 15 minutes.
Use potato masher and mash it all up so it's more pasty instead of lots of separate beans.

Here's what I do:
I don't use any oil
Heat diced tomatoes and onion flakes in pan
Add everything else (garlic, seasonings, black beans, salsa)
I don't add the 1 C. water
Simmer 15-30 minutes
I serve with:
1 point tortilla
WW cheese (how many points I want to use)
2 oz. of avocado-2 points
2 T. light sour cream-1 point
1 C. of lettuce to count for a whole veggie serving.
For lunch I make a 7 point taco only using 1/2 of the amount of bean mixture. For dinner I would make 2 different taco's but divide the beans, the cheese, sour cream, and avocado between the 2 taco's. This would make 2 taco's totaling 9 points.
FYI-These are especially good with Avocado!

After not counting my points through the holidays, I'm back on track!...(and I only gained a couple pounds through it all, so that's good.) I also bought a cookbook a couple months ago when they were half off at the meetings. I think I'm really going to like it once I start trying the recipes! (IF I ever start trying them, lol).

I took the skin off, cubed it all up, and then weighed 16 oz. (2 potatoes) of it to put in the soup. Then because of time I only let it cook about 15 minutes which was fine but it didn't get quite as thick. Next time I do it I'll definitely use more potatoes and cook it the full length. Probably 3 times as many potatoes so there's more per bite. I'll have to adjust the points but it won't be too bad since these are potatoes we're talking about.

3/4 C. splenda
1/2 t. salt
1 t. pumpkin pie spice
Beat until smooth. Spray pie and pour mixture into the pan. Bake at 400 for 15 minutes, then at 375 for 45-50 minutes until knife inserted in center comes out clean.
1/6 pie = 1 point or Filling Food
Servings-6

Chocolate Freeze-4 points (and a whole milk serving)
I've been using a scoop of my powdered/dry milk in some different foods lately. 1/3 C of my dry milk is 1 point and it's a whole milk serving. The other day I made oatmeal and put part of a scoop in it and it was great. I normally put a 1/2 C of milk in my oatmeal but this way, since it's dry, it just makes it more creamy and if I use the whole 1/3 C it's giving me the WHOLE milk serving instead of just half like a half cup of milk would.
Well today I tried something that I really liked:
Blend-
1/2 C. FF half and half-2 points
1 scoop (1/3 C.) of powdered milk-1 point (and a whole milk serving)
2 t. creamer (the kind you would put in coffee)-0 points
1 1/2 T. chocolate syrup-1 point
1 t. cocoa-0 points
8 ice cubes
Right before I blended it I put about 1/4 C of water in it over the ice cubes.
It was pretty rich and thick and creamy. Give it a try!

They are usually by the packaged meat by the deli. Well at walmart they are. Anyways one triangle is 1 pt and I put it on celery, my 1 pt bagels, sandwiches, and crackers. I seriously couldn't live without it.
The other thing is pumpkin muffins. These are so good especially with Fall coming. These muffins are 2 pts and you can make them 1 pt if you put a fiber cereal in them. the 2 pt recipe is

Clam Chowder - 2 points per cup
3 (10 3/4 ounce) cans 98% fat-free cream of celery soup
2 (6 1/2 ounce) cans chopped clams, not drained
1 (1 pound) bag frozen fat-free shredded hash brown potatoes
1/2 cup chopped onion
1 pint fat-free half-and-half
1 T. bacon bits (I buy the bag of real bacon bits)
put all ingredients in slow cooker and cook on low for 8-9 hours
Homemade Chicken Noodle Soup - 3 points per cup
1 1/2 pounds boneless, skinless chicken breasts (3-4 depending on size)
1 (49 1/2 ounce) fat-free chicken broth
1 cup cut up carrots (cut quite small)
1/2 cup chopped onion
1/2 cup chopped celery
2 small bay leaves or 1 large bay leaf
2 cups home-style egg noodles, uncooked (I use "Country Pasta" brand)
salt and pepper optional
Cut the chicken into small pieces and brown on stove
In slow cooker combine everything except the noodles. Cook for about 4 hours on high or 7-9 hours on low. About 30 minutes before you want to eat add the noodles. If you cooked it on low turn it to high before adding the noodles. Cook the noodles about 30 minutes (be careful not to over cook) then turn the slow cooker off and remove the bay leaves. Use salt and pepper to your taste.
1 point tortilla taco's
I've tried a few different 1 point tortilla's and the one that I like the best is La Banderita. They're the best flavor and texture that I've found. Too bad regular tortillas are 3 whole points because I LOVE them, but not enough to waste 6 points to make 2 small taco's.

I ALWAYS use ground turkey since Tom can't have beef. It has less calories and fat (even compared to the 10% ground beef). I'm totally used to it now and I'm even getting to the point where I prefer it over ground beef. I know, crazy! :)
Anyway, I fry it up, put 3 T. of taco seasoning and then about 3/4 C. of Pace Picante in it and let it simmer.
To make taco's I always change it up a bit.
This is what I did last time I made taco's (7 points)
tortilla (warmed)-1 point
2 or 3 oz. seasoned turkey meat-2 or 3 points
1/2 C. black beans (or kidney beans, pinto beans, or refried beans)-1 point
2 T. light sour cream-1 point
a good amount of diced tomato-0 points
1/3 C. WW fiesta cheese-2 points
lots of lettuce-0 points
salsa-0 points

Put 6 slices of Oscar Myer Deli fresh black forest ham (1 pt)
1 oz of reduced fat cheese (2 pts)
Spread the sandwich thins with Land o Lakes light butter with canola oil on the outside (1 Tbs=1 pt) and grill it.
(She actually flips the sandwich thin so the inside is actually the outside so it butters and grills better)
Put tomatoes and thinly sliced red onions on it before you grill it so they get nice and warm
Then take it off and add a little shredded lettuce
I can't wait to try this.
**You could use the 1 point cheese slices (Great Value 2% singles or the WW brand) instead if you would like. This would make the sandwich 4 points.

New Food Ideas!
I LOVE when people share "food finds"! Tonight at Weight Watchers some different people shared some things that I want to try at some point. I don't know the exact info about them right now, but here's what I do know:
1. At Trader Joe's and Fresh and Easy you can buy a Brownie mix that you make with yogurt and they're 2 points for 1/12 of the pan. The people say they're pretty good!
2. There are some single serving veggies that are in the freezer section and they have a cheesy sauce on them for 0 points. For 2 servings it would be 1 point. I'm not SURE I'll like them, but if I do, I think it will be something good to add in with my lunch.
3. Uncle Ben's brown rice. It's 1 C. and you only have to microwave it for 1 minute and the points are quite low. I just don't remember what the points are. Again, this is something I think would be handy to have around for when I'm at a loss for ideas. I'm thinking I would like to do a little rice bowl with some chicken and beans and salsa, kinda like a rice bowl I've gotten at El Pol lo Loco. Just a though, but haven't finalized the thought yet :)
4. Fresh and Easy has some honey pretzel twists that several different people said are really good. They mentioned that the pretzels are a good size (they were showing 3 inches tall and said it's kinda thick) and you get 10 of them for something like 1 point (possibly 2 points, I can't remember exactly). If you have the munchies they would definitely do the trick!

Chocolate Ice Cream-2 points
I get the Country Rich Choclate light ice cream from Walmart. They come in square, gallon sized containers. I didn't even realize it was light ice cream until Tara told me it was. It is so yummy and as I was eating my half cup last night I told Kyle, "I seriously just love this ice cream," for the thousandth time.

Pronto Pizza Patties-6 points
This is another meal that we all love! Don't let the length of this post scare you away. It's really easy and very tasty :)
Prep time: 15 minutes
Cook time: 13-16 minutes
1 lb. 93% lean ground turkey
1/2 C. seasoned dry bread crumbs
1/2 C. diced green bell pepper
1/4 C. finely chopped onion
1 garlic clove, pressed
1 egg white
1 can (8 oz.) pizza sauce, divided
1/2 C. (4 oz.) shredded reduced-fat mozzarella cheese
6 French or Italian bread slices, cut 1/2 inch thick
2 t. olive oil
1 t. Italian Seasoning Mix (the Pampered Chef kind is really good!)
1. Combine-turkey, bread crumbs, bell pepper, onion, garlic and egg white. Add 1/4 C. of the pizza sauce to meat mixture. Mix lightly but thoroughly.
2. Form mixture into six oval patties, 1/2 inch thick. Heat skillet over med. heat, then cook patties 12-14 minutes or until meat is no longer pink in center, turning once. About 1 minute before patties are done, top with cheese. Remove patties from skillet and keep warm.
3. Wipe out skillet w/ paper towel. Brush one side of each bread slice with olive oil; sprinkle with seasoning mix. Heat skillet over med. heat. Place bread slices seasoned side down in skillet. Toast 1-2 minutes or until bread is lightly browned.
4. Place patties on bread slices. Microwave remaining pizza sauce, covered, on HIGH 45-60 seconds or until heated through. Serve with sandwiches.
Yields: 6 sandwiches

1/2 C. seasoned dry bread crumbs
1/2 C. diced green bell pepper
1/4 C. finely chopped onion
1 garlic clove, pressed
1 egg white
1 can (8 oz.) pizza sauce, divided
1/2 C. (4 oz.) shredded reduced-fat mozzarella cheese
6 French or Italian bread slices, cut 1/2 inch thick
2 t. olive oil
1 t. Italian Seasoning Mix (the Pampered Chef kind is really good!)
1. Combine-turkey, bread crumbs, bell pepper, onion, garlic and egg white. Add 1/4 C. of the pizza sauce to meat mixture. Mix lightly but thoroughly.
2. Form mixture into six oval patties, 1/2 inch thick. Heat skillet over med. heat, then cook patties 12-14 minutes or until meat is no longer pink in center, turning once. About 1 minute before patties are done, top with cheese. Remove patties from skillet and keep warm.
3. Wipe out skillet w/ paper towel. Brush one side of each bread slice with olive oil; sprinkle with seasoning mix. Heat skillet over med. heat. Place bread slices seasoned side down in skillet. Toast 1-2 minutes or until bread is lightly browned.
4. Place patties on bread slices. Microwave remaining pizza sauce, covered, on HIGH 45-60 seconds or until heated through. Serve with sandwiches.

Southwestern Skillet Chicken (around 8-10 points for 1 serving)
I tried a new meal last night and it was a HIT! It only took me about 30 minutes and I only used 1 pan! Dang easy and dang good!! :)
You'll need:
1 to 2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breasts (about 1 1/4 lb)
1 tablespoon vegetable oil
1 can (15 oz) black beans, drained, rinsed
1 can (11 oz) Green Giant Mexicorn, undrained (whole kernel corn with red and green peppers)
1/3 cup salsa
2 cups hot cooked rice
-Mix chili powder, salt and pepper then sprinkle evenly over both sides of chicken breasts.
-Heat oil over medium heat. Add chicken and cook 8 to 10 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F).
-Stir in beans, corn and salsa. Heat to boiling. Reduce heat. Cover and simmer 3 to 5 minutes or until vegetables are hot. Serve with rice. Makes 4 servings.

Today for lunch I had a wrap similar to other wraps I make, but it was delicious!! It was pretty much the Melted Cheese wrap, but better since it had a couple more additions.
The reason I put 6 or 7 points is because it would depend on what kind of cheese you use. I'm a cheese lover so I like regular cheese. No fat free or light for this girl :) I'm willing to use more points on cheese which I recognize most people aren't.

This dressing is awesome!! The brand is Bernstein and the name of dressing is Cheese Fantastico. It's Italian, but not just a plain Italian, it's CREAMY, which I love!

I get these at Walmart in the refrigerator section right next to the cream cheese.
The brand is Western Bagel and I get the Cinnamon Spice flavor. There are also several other flavors to choose from.

I didn't have any milk in my house this morning so I had to come up with something quick before my kids got too annoyed. I don't know that I normally would have done this random combination, but I didn't really have any other choice. Its what I had in the house.
1/4 cup regular vanilla yogurt
1/2 cup unsweetened applesauce
1 1/2 cups fresh strawberries
1/2 of a ripe banana
1 small clementine
1 cup (or a little more) crushed ice
Put in the blender in this order and blend.
It made about 3 1/2 cups and I gave the last half to Hudson. It was really good and really satisfying for me.

Again, on the run, this is a pretty good choice. Especially if you're sick of grilled chicken :) It's 8 points, but I'm pretty sure it has the tomato and lettuce.

This sandwich is a good choice when you're on the run and you have to grab something. Stay safe with this choice rather than a hamburger that will use the points for half of your day :) It's very tasty, too.

If you're looking for something to munch on, Pringles are the thing for you. I'm pretty sure it's 16 Pringles for 1 pt. You can't go wrong with that :) It's a great snack or something to have along side your sandwich.

1T. Dijon Mustard

Mix together. Pour a little in a small dish and then lay the salmon on it. Finish by pouring the rest of the marinade over the salmon so it is completely covered. Let sit for an hour or so and then move salmon onto a cooking sheet. Bake at 350 degrees for 20-25 minutes. Serve with a vegetable.

Grill chicken on the top shelf of the BBQ. Give it about 10 minutes each side on medium heat.
While the chicken is grilling cut up bell pepper (any or all colors), yellow onion, and mushrooms all into strips. Put about 1/2t. - 1t. oil in a pan and saute the veggies on medium heat. To get them crunchy but a little soft I like to add some water to them, they soften up immediately.
When the chicken is done on the grill bring them inside and lay them on a cookie sheet. Lay a slice of pepper jack cheese on each chicken breast, cover with TONS of veggies and broil until cheese is melted.

While the chicken is grilling cut up bell pepper (any or all colors), yellow onion, and mushrooms all into strips. Put about 1/2t. - 1t. oil in a pan and saute the veggies on medium heat. To get them crunchy but a little soft I like to add some water to them, they soften up immediately.
When the chicken is done on the grill bring them inside and lay them on a cookie sheet. Lay a slice of pepper jack cheese on each chicken breast, cover with TONS of veggies and broil until cheese is melted.
Serve with Rice Pilaf
Cranberry Cream Cheese and Turkey Wrap- 6 points
Lay a flat out on the counter-1
Spread 2T. cream cheese down the center-1 (WW brand-whipped)
Spread 1/4 c. cranberries (not jellied) on top of cream cheese-2 (Great Value brand)
Then put 2 ounces *left over cold Turkey on it-2
Generously cover with chopped lettuce and wrap it up!
It may seem like a lot of cream cheese and cranberries but it makes it so creamy and juicy and I DONT like dry tasting meat. The lettuce is a must. It gives it that yummy crunch.
* I usually make a Butterball brand Boneless Turkey Breast Roast (from Walmart) for dinner a few nights before. We eat it with mashed potatoes and gravy and some sort of vegetable. I then use the rest of the Turkey for other things to finish using it up.
~To make the Turkey Breast Roast you can put it in the crock pot frozen for about 7 hours on low.

Jumbo shrimp (I used 10)
Marinade in Zesty Italian dressing about 10 minutes before barbecuing
Place on kabob sticks
Barbecue on medium fire leaving it open
Cook on one side about 7 minutes
Flip them over and brush a little more Italian dressing on
Cook another 7 minutes or so, until pink
Teriyaki sauce for dipping, yum.
Serve with veggies (I steamed asparagus)
